Just talking about the basic oil pressure sender (switch?) mounted to the block that switches the oil light on the dash, not a variable resistance one that has a proper gauge to read pressure. Are they normally closed or normally open? ie: with no pressure is the sender grounded or open circuit?

correct - sensor provides ground for dash oil light so is NC
If its not measuring pressure (ie like a guage that moves) then it is called an oil pressure switch.
