Yeah plennum wouldn't bolt on, it doesn't share the same ignition system so your loom and ecu are useless without a hell of a lot of work.

Not here to discuss whether you think it's a good idea or not, just wanting to know if anyone can think of a reason why there would be any problem running a 2JZGTE plenum/loom/ecu on a 2JZGE?

Yeah plennum wouldn't bolt on, it doesn't share the same ignition system so your loom and ecu are useless without a hell of a lot of work.
The plenum could be adapted if you can get someone to cut and shut the runners, but not worth the hassle IMO. Plus you'll lose the ACIS in the GE plenum which is a good thing to have for a NA engine.
As for the GTE electronics, forget it as stated above. The biggest problem is lack of a crank-mounted CAS on the GE engine, and getting one on there involves sourcing and installing a GTE oil pump.

2JZGTE oil pump hard to source? Anything else that would cause it not to work?

well, the GTE would also probably be tuned different for the vacuum section of the map, since the GE has higher compression
