Might have blown a fuse from the water shorting out your wires. You need power going to the electric choke so it shuts off. If the choke is stuck on you will have a fast idle and your engine will want to keep running when you turn it off because it is still sucking fuel into the engine and hot carbon on top of your pistons will be enough to make it fire. Normally when you turn your engine off it will stop because the fuel cut solenoid shuts off fuel to the idle circuit of the carby. When your engine is running at 2500RPM it is running on the primary main jet so cutting fuel to the idle circuit will not stop it. Might have to hold one foot on the brake and let the clutch out to stop it until you fix the problem.
